Urban foods systems expands to better serve working professionals
Beginning this fall, Kansas State University and faculty at its Olathe campus are making it easier for community leaders around the world to increase access to fresh produce and economic prosperity in their towns or cities by providing a fully online master’s degree program in urban food systems.
Matt Arnold joins the K-State Olathe team as the new Food Programs and Services coordinator. Matt will be assisting Bryan Severns, manager of Food Programs and Services in the Food Innovation Accelerator and research kitchens. Welcome, Matt!
Russell Stover breaks Guinness World Records title in Kansas City
This year, Russell Stover Chocolates successfully broke the Guinness World Records title for the Largest Box of Chocolates. Londa Nwadike, Extension Associate Professor of Food Safety for Kansas State University and the University of Missouri, attended as a food safety observer.

Haley Larson, Ph.D.
Eleni D. Pliakoni, Ph.D., is a professor of urban food production and postharvest handling who brings years of experience working with urban food systems. She teaches a robust assortment of classes designed to help students propel their careers forward, including courses on urban agriculture, professional development in urban food systems and more.
Haley Larson, Ph.D., is a teaching assistant professor of animal health who brings a unique teaching perspective to our campus. Larson previously worked as a senior scientist for Cargill Animal Nutrition and Health and has an incredible passion for guiding students from classroom to career.

We loved hosting this year's Army Healthy Menu Cook's Training. Army day care food service workers joined our campus from across the United States, Japan and Korea to study cooking with Bryan Severns of K-State Olathe and and nutrition training with Jennifer Hanson of K-State College of Health and Human Sciences.
Menaka Garapaty was the fall 2022 intern in the microbiology and food safety lab. She used her lab experience to complete her Distinguished Scholars Academy Senior Capstone project earning her first place in her division in the Greater Kansas City Science and Engineering Fair this April. Manreet Bhullar, Ph.D., supervised her project. Garapaty had to remove the lasered UPC on the apple peel and culture it for E. coli bacteria. She compared the lasered samples with intact apple skin to determine if the laser affected the safety of the apple. Plastic stickers on produce are banned in Europe and the U.S. is likely to follow suit. This study makes the case for a viable alternative to track biosecurity in our foods.
Check out what these Girl Scouts have been up to! The Girl Scouts of NE Kansas & NW Missouri visited K-State Olathe for the New Cuisines Badging Event. As partners with the troop, K-State Olathe provides programming focused on the fundamentals of food. Attendees learned how to make pizza dough and weigh ingredients. They also focused on both food and knife safety. Each of the participants also had the chance to make calzones and their own sauce from scratch.
